Recording broadcast quality audio remotely

Hi
I have an 86yr old contributor I want to interview for a television documentary series.
Hopefully I will get him on camera one day but in the meantime I want get a quality audio recording of his story that I can use in the edit.
I want use a app like skype or zoom to get that personal interaction but I'm thinking of providing him with recording device
ie Zoom H1 to record his voice locally....any tips out there? Needs to be simple..
